Unlike less expensive cookers, the WSM is a terrific performer right out of the box and doesn't require much in the way of modifications. In my opinion, the only thing you must do before using your new WSM is to buy a good quality thermometer for measuring the cooker temperature. Having said that, there are lots of creative people out there that have developed modifications for the Weber Smokey Mountain Cooker. This series of topics provides an overview of the most common ones. Most of these modifications attempt to increase the cooking capacity, functionality, convenience, or style of the cooker. As you browse through these modifications, you may find one that solves a problem you've been having with your WSM, or you may come across one and think, "That's crazy!" If you're new to the Weber Smokey Mountain Cooker, my advice is to use it for at least six months before undertaking any permanent modification. By getting to know the performance characteristics of your cooker, by reading the various topics on this Web site, and by talking with other WSM enthusiasts on The Virtual Weber Bulletin Board, you may find an acceptable solution that eliminates the need for a permanent modification. |
